Ilse's Spicy Chinese Cucumber Salad
Personal Note
At Conscious Kitchen we often receive A LOT of cucumbers from the market, enough even to take home even after a number of them have been used for cooking. And I have always taken a lot of those home, only to realise that I had no clue what to do with them, and that, after weeks of eating cucumbers, was kind of getting bored of the flavour. Thus I went online and started to look for inspiration to make some new recipes with these cucumbers. The following recipe has been inspired by a recipe of the foodblog China Sichuan Food.

Ingredients and Method
1 cucumber
3 cloves garlic
1 tbsp black vinegar
1 tbsp soy sauce
0.5 tbsp sugar
0.5 sesame oil
1 teaspoon of white sesame seeds
0.5 tbsp chili oil (or more depending on taste)
Sprinkle of salt (depending on taste)

Clean the cucumber, scrape the skin off and cut it into cubes.

Peel and crush the cloves of garlic with a garlic press

Mix the cucumber cubes and the garlic in a bowl

Add the black vinegar, soy sauce , sesame oil and chili oil and mix it through the cucumber with a spoon

Add the salt and sesame seed and mix it through the bowl

Serve!
