Sam's Cranberry Oat Cookies

Sometimes the cooking crew comes up with the most amazing desserts, and since Sam has joined our coordinator team these amazing treats have been occuring more and more often.
We've had so many people ask for the recipe of these cookies, that they finally were willing to share it with all of you. (Though if you want to try them more often without having to bake it yourself, they're apparently a staple at the Heylena cafe, so don't forget to drop by there!)

Ingredients for ~60 cookies
460g vegan butter, softened
350g brown sugar
170g white sugar
4 tbsp maple syrup (note 1)
1tsp vanilla extract
360g flour
550g oats
4tsp cinnamon or cardamom
2tsp baking soda
2tsp salt
8tsp cornstarch
360g dried cranberries
250g chopped walnuts
225g mashed ripe banana (note 2)
The Method
1. Preheat oven to 175C and line baking sheets with parchment
2. Combine flour, oats, cinnamon, baking soda, salt, cornstarch
3. In a separate bowl cream together butter, brown/white sugar, banana, syrup, and vanilla until completely smooth
4. Combine dry and wet ingredients, stir until evenly mixed then add cranberries and walnuts
5. Portion into 2 tbsp balls, press down to flatten slightly
6. Bake for 12-15 minutes
7. Let cool ~10 minutes before serving
Notes
1. Any sugary syrup will work, treacle, molasses, date syrup, agave, etc.
2. If using less sweet egg replacer like flaxseed, increase brown and white sugar to 400g and 200g respectively
